Thai Carrot Soup

I just made this awesome soup and thought I'd share how to make it.
It's just something I thought up from what I had in the kitchen and running across the new broth at the Thriftway.

Thai Carrot Soup

2 lbs Carrots
5 Stalks celery
1 Granny Smith Apple
1 Sweet potato (medium size)
8.5 oz of Cream of Coconut
2 Cups of Light Cream
3 Table spoon of finely chopped ginger (I used crystallized ginger)
32 oz container of College Inn Thai Coconut Curry Chicken Broth
tsp nutmeg
Juice of two lemons.
1/2 tsp salt

Clean and chop first 4 ingredients and add to a pot with boiling water. Boil until the carrots are soft.

Add ginger to blender and spoon in cooked/ drained ingredients along with enough broth to blend. Set the blender on the highest speed until everything is blended smooth. Pour blended mixture back into emptied stock pot and repeat until all ingredients are blended.

Add any remaining broth and unused ingredients. Stir and it's done. Really simple

That sounds delicious 2014. For some reason Nunzio has decided to start eating soup (he always hated it for some reason). Now I have a new recipe! Thanks :)
